How to choose vegetables, fruits and dried fruits
Since vegetables and fruits are the bulk of the Pegano diet, it is important to choose the right foods. Let’s consider the main recommendations.
Choose local producers.
It is also known that producers use pesticides to grow fruits and vegetables. These chemicals fight pests, plant diseases and weeds.
However, Pegano writes, the benefits of vegetables and fruits far outweigh the potential harm from the pesticides they contain. To protect yourself from possible harm from chemical compounds:
If possible, buy organic fruits, they are grown without the use of chemicals;
Before eating, do not be too lazy to thoroughly wash the fruits with soap or peel them.
Choose seasonal fruits
Try to choose seasonal vegetables and fruits, such fruits are fresher and contain more vitamins and minerals.
Growing fruits out of season requires more fertilizer for their growth and ripening.
And therefore, such fruits are more harmful to the body and contain less nutrients.
Separately about juices: their benefits and harms
When Pegano was developing the nutritional system, there was never that much information about juices. Now there are different opinions about juices: some talk about their benefits, others – about the dangers.
But let’s not talk about juices in the abstract, but compare the benefits of freshly squeezed juices with the benefits of vegetables and fruits themselves. Indeed, patients with psoriasis are faced with just such a choice. Since the main emphasis in the diet, Pegano proposes to focus on plants – in their fresh form, cooked or in the form of juices.
Of the advantages of juices in comparison with fruits, we will mention, perhaps, only one. Juices contain concentrated amounts of vitamins and minerals. You can easily drink the juice of several vegetables and fruits, while eating them all will be more difficult.
The rest of the benefits of juices – for example, improving the intestinal microflora and cleansing the body – follow from the benefits of the vegetables and fruits themselves.
Disadvantages of juices
Now let’s look at the disadvantages of juices:
Juices do not contain fiber, which is necessary for the health of the digestive system. Juices contain concentrated sugar, which is undesirable for people with carbohydrate metabolism disorders. In this case, the fiber of the fruit, which is absent in regular juices, could help and slow down the process of absorption of sugars.
The recommendation for these two points is to opt for pulp juices or smoothies. This way, the healthy fiber stays in the drink and will delight your intestines. In juices, vitamins and minerals are quickly oxidized and destroyed. Recommendation: Drink juices immediately after juicing.
Therefore, it is better to give preference to the fruits themselves – fresh vegetables or fruits. They are devoid of the disadvantages of juices and have all their advantages. And if you still want to drink juices, drink them in moderation and prefer freshly squeezed juices with pulp or smoothies.
Pegano lecithin is classified as a strong alkaline product. It is obtained mainly from soybean oil, so it is rich in vegetable proteins.
Lecithin is available in liquid, capsule, granule, and powder form. Pegano recommends taking lecithin in granular form.
And he suggests to use it regularly: 1 tbsp. spoon of granulated lecithin 3 times a day 5 days a week. It can be diluted in water, juice, or added to food.
As the skin cleansing, the dosage should be reduced:
take 1 tbsp. spoon a day 5 days a week.
In addition to the main effect, lecithin has other benefits:
it restores and protects the liver,
helps to digest food,
facilitates bowel movements,
and is not addictive.
However, lecithin should not be overused as it impairs calcium absorption. And this can lead, among other things, to the development of cardiovascular diseases.
Also, lecithin should be taken with caution in patients with exacerbation of cholecystitis, pancreatitis and gallstone disease. Since lecithin has a choleretic effect and accelerates the excretion of stones from the gallbladder.
Acid-forming foods – 20-30% of the diet
Acid-forming foods, while making up a relatively small percentage of the daily diet, are vital to the body’s growth, recovery, and development.
The use of foods that increase acidity in the body should be limited to 20-30% of the daily diet. Such food contains a lot of proteins, fats and oils, sugars, starches. And for their assimilation, the body secretes a lot of acids. Acid-forming foods include:
Meat, poultry, eggs,
Sugar and foods with it.
Eat dairy products only fat-free or low in fat and salt.
Limit their intake: eat only occasionally and in small quantities. Give up dairy products completely if you have an intolerance to them.
It manifests itself in the form of constipation, diarrhea, joint pain, congestion and swelling. Sometimes there is a temporary intolerance to dairy products. Then exclude them for a while.
Caution – hormones and antibiotics in meat and milk
It is important to bear in mind that over the past decades, the quality of meat and dairy products has deteriorated significantly. Farmers save on nutritious food and livestock.
And to increase productivity, they are stuffed with hormones so that they grow faster, and antibiotics so that they do not get sick. Therefore, meat and milk are not at all the same as they were in the days of our childhood.
The consumption of foods rich in hormones and antibiotics leads to the fact that they accumulate in our body. And, as you know, drugs can cause the onset and exacerbation of psoriasis.
Therefore, try not to exceed the portion size and choose, as Pegano recommends, lamb – these animals always grow on free grazing. And dairy products are really eaten only occasionally and a little.

If due to intolerance you have to give up dairy products, do not worry about additional sources of it. Calcium is found in other foods in the Pegano diet.
In particular, calcium is rich in:
Green leafy vegetables:
spinach and all types of cabbage (white, red, cauliflower, green Chinese, broccoli, kohlrabi, Brussels sprouts), leeks, celery, sorrel;
Avoid white bread and all white flour products altogether.
Whole grains, grains, bran, grains, and seeds can be eaten in moderation.
The exception is millet: you can eat more of it because it is alkaline.
Eat only whole grains pasta and bread. Rice is only brown or wild.
Don’t mix citrus fruits and whole grains in the same meal.
Pure water – one and a half liters per day, not counting the amount of liquid in soups, teas, broths, etc.
Skip coffee. If this is not possible, drink no more than 3 cups a day. In this case, coffee should be decaffeinated, without added sugar, milk or cream. Avoid all unnatural drinks, especially soda. That is, from drinks containing: sugar, preservatives, artificial flavors, artificial colors.
Alcoholic drinks are contraindicated for psoriasis, since alcohol provokes psoriasis. Eliminate alcohol in all its forms (including beer), although of course this is not easy to do. It is allowed only occasionally to drink a glass of dry red or white wine (no more than 50-100 g).
Tomatoes and any products containing them, including sauces and ketchups;
Peppers (excluding black);
Red pepper – paprika;
Tobacco – promotes acidification of the body.
Therefore, you should quit smoking completely, or at least significantly reduce (to a few cigarettes a day). Smoking has been shown to worsen psoriasis.
